- one whole wheat pita (I use a local bakery brand that I get at my Whole Foods)
- generous amount of hummus (buy a fresh, high-quality one or even better make your own - watch the salt here since the Parmesan cheese has plenty)
- shaved or grated high-quality Parmesan cheese
- heaping handfuls of baby spinach and arugula
Easy peasy:
Preheat your oven to 400 degrees or broil - your choice, you know your oven.
Slap some hummus on the pita and slather it around.
Sprinkle the desired amount of Parmesan cheese.
Pile the greens on top; I recommend really piling them on since once you put them in the oven they wilt and decrease in volume. Plus - they are so good for you - the more the better.
Bake or broil in the oven until pita and hummus are warm, cheese is melted, and greens are wilted. (Watch it in the oven, though, especially if you broil ... if your green get too wilted and dry they will turn into kindle and flame! This hasn't happend to me, but it could happen, right?)
