recipes on my mind :: what we ate

This "recipes on my mind" post is a little different because it is actually what we ate this past week ... and let me tell you - it was all delicious!

:: quinoa burrito bowls with creamy avocado dressing on top ::
We had our quinoa burrito bowls with fresh pico de gallo, cheddar cheese, black olives, and creamy avocado dressing on top. For the avocado dressing,  I use soy-free veganaise in place of mayo and a hot sauce with no artificial ingredients or preservatives.

:: northern spy's kale salad ::
This kale salad is one of the tastiest kale salads I have ever had ... and one of the tastiest salads, in general that I have ever had. I added quinoa to it to make it  a little more substantial.

:: protein thin mints ::
These turned out super tasty. I lined a muffin tin with non-bleached cups and poured the mixture in the bottom of them (only about 1/8" thick). I used Jay Robb's Egg White Protein Powder because we are not big on whey protein.

:: 2 ingredient cookies ::
I actually made mine 4 ingredient cookies by adding some almond butter and chocolate chips. Delicious! John enjoyed them with some of his favorite organic vanilla ice cream.

This is just a few of the meals we ate this week, but they were some of the tastiest. We love eating at home so that we know that we are eating quality, healthy, whole, organic foods.
